The Red Beans and Rice Tradition



• Red beans are also known as kidney beans.

• New Orleans favorite son, Louis “Satchmo” Armstrong, often signed his letters "Red beans and ricely yours."

• Red beans are typically served with sausage or ham but often feature pork chops or fried chicken. They are almost always served over rice.

• Red beans are believed to have been introduced to South Louisiana by the French Canadian settlers, also known as Cajuns.

• Red beans and rice on Monday is a quintessential New Orleans tradition. Over time, the dish’s popularity spread throughout the Gulf South, and each year millions of visitors take a taste of New Orleans home with them to share with family and friends.

• Red beans and rice are traditionally fixed on Mondays (or "wash day") for two reasons: 1. The dish could cook on the stove all day while laundry was being washed, and; 2. Families typically had a large Sunday meal, often including ham, and the hambone or other leftover meat would be used to enhance the dish.

• The tremendous convention and tourism industry of New Orleans initiates millions of new visitors each year to the time honored tradition of red beans and rice. Many of these visitors take home Louisiana-made food products to share with their families and friends.

• Following Hurricane Katrina in 2005, Camellia was inundated by calls from displaced New Orleans evacuees throughout the United States desperately searching their new local groceries for Camellia Brand red beans.

• Ongoing media coverage of the Gulf Coast regions affected by Hurricanes Katrina and Rita in 2005, particularly the New Orleans area, has kept Louisiana in the national spotlight and top-of-mind for many Americans.
