Cherry Pecan Black Bean Brownies

Ingredients:

  • 1 (1-pound) bag cooked, drained Camellia Brand Black Beans
  • 2 large eggs
  • 10 tablespoons butter, melted
  • 1 1/2 cups cocoa powder
  • 1/2 teaspoon salt
  • 1 tablespoon vanilla extract
  • 1 1/2 cups sugar
  • 4 teaspoons baking powder
  • 1/2 cup chopped pecans
  • 1/4 cup chopped dried cherries

Directions:

  1. Preheat oven to 350 degrees.
  2. Grease a 9×13 inch baking dish with butter.
  3. Put cooked beans, eggs, melted butter, cocoa powder, salt, vanilla extract, sugar and baking powder in a food processor, and process until smooth, occasionally scraping down sides of bowl.
  4. Stir pecans and cherries into batter, and spread evenly into prepared baking dish.
  5. Bake 20-25 minutes, or until brownies start to pull away from the sides of the pan.
  6. Cool completely before cutting and serving.
