This blackeye pea pasta salad made with meal-prepped Cowboy Caviar is a fast, easy lunch. (Our Cowboy Caviar marinates in a delicious dressing; be sure to scoop extra dressing from the bottom of the storage container to toss with the pasta.)

Ingredients:

  • Prepared, refrigerated Cowboy Caviar
  • Any type of pasta, cooked then cooled
  • Crumbled feta cheese, optional
  • Additional freshly chopped cilantro, optional

Directions:

  1. Toss together equal amounts of cowboy caviar and pasta, top with a sprinkle of feta cheese and cilantro, and serve.
