Ingredients:
- 3 cups dry Camellia Brand Black Beans
- 1 yellow onion, chopped
- 1 yellow bell pepper, chopped
- 1 orange bell pepper, chopped
- 2 tablespoons olive oil
- 4 garlic cloves, finely chopped
- 4 cups chicken broth
- 2 1/2 cups cubed, cooked turkey
- 1 (15-ounce) can solid-pack pumpkin
- 2 (10-ounce) cans of roasted diced tomatoes and green chilies, undrained
- 1 (8-ounce) can of tomato sauce
- 1 teaspoon chili powder
- 1 1/2 teaspoons dried oregano
- 1 1/2 teaspoons ground cumin
- 1 teaspoon kosher salt, or to taste
Directions:
- Rinse and sort beans. (Optional: Soak beans using your preferred method.)
- In a large skillet, sauté the onion and yellow pepper in oil until tender.
- Add garlic; cook 1 minute longer.
- Transfer onion, pepper and garlic mixture to slow cooker, and stir in all remaining ingredients.
- Cover and cook on low for 8 hours.
