  • 1 (1-pound) package Camellia Brand Pink Beans
  • 1 tablespoon extra virgin olive oil
  • 2 cups chopped white onion
  • 2 cups chopped bell pepper
  • 2 tablespoons chopped garlic
  • 2 tablespoons chili powder
  • 4 teaspoons dried thyme
  • 2 cups chopped fresh tomato
  • 1 (14 1/2-ounce) can no-sodium chicken broth
  • 1 (6-ounce) can tomato paste
  • 1 cup water

  1. Rinse and sort beans. (Optional: Soak beans using your preferred method.)
  2. In a skillet, sauté onion, bell pepper and garlic in olive oil until soft.
  3. Add sautéed vegetables and all remaining ingredients to slow cooker. Stir well.
  4. Cook on low for 6-8 hours.
