Ingredients:
- 1 tablespoon extra virgin olive oil
- 1 carrot, chopped
- 1 stalk celery, chopped
- 1 cup chopped onion
- 1 teaspoon curry powder
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1 cup dry Camellia Brand Yellow Split Peas
- 4 cups water or milk
- Salt to taste
Directions:
- Rinse and sort peas.
- Heat olive oil in a large saucepan. Cook and stir carrot, onion, celery and spices for about 5 minutes.
- Add the water, peas and salt.
- Simmer, stirring occasionally, for 45 to 50 minutes, or until very thick.
