White Bean and Smoked Pork Sandwich on Texas Toast

Ingredients:

  • 2 lb. Camellia Brand Great Northern Beans (soaked overnight)
  • 2 lb. smoked pork (your favorite smoked pork product will work)
  • 1/4 cup bacon drippings (or other fat)
  • 2 cups chopped onion
  • 1 cup bell pepper
  • 4 cloves minced garlic
  • 4 quarts of chicken stock
  • 2 bay leaf
  • Tabasco hot sauce
  • Salt and pepper

Directions:

White Beans

  1. In a small soup pot, heat bacon fat until hot.
  2. Add onions, peppers, and garlic and sauté for 10 minutes on high heat.
  3. Add beans, stock, and bay leaf.
  4. Cook on medium heat (simmer) for two hours.
  5. Stir beans every 10 minutes.
  6. When beans are tender, creamy, and falling apart; season beans with hot sauce and salt and pepper.
  7. Cool beans overnight.

Sandwich

  1. Toast your favorite bread on both sides with butter until golden brown.
  2. On one side of the bread; spread creole mustard.
  3. Smear bean and pork mixture evenly across the toast. Make sure to have a good ratio of beans and meat.
  4. Add your favorite pickle chip on the sandwich.
  5. Cut sandwich in half and serve immediately.
